Citrus Glazed Carrots

These carrots make a quick and sweet side dish. Recipe from The PCOS Nutrition Center Cookbook: 100 Easy and Delicious Whole Food Recipes to Beat PCOS.


1 pound of baby or chopped carrots
1 teaspoon of grated orange zest (about 1 large orange)
½ cup freshly squeezed orange juice
2 tablespoons unsalted butter
1 tablespoon honey
2 teaspoons fresh rosemary


In a medium skillet combine carrots, zest, juice, butter and honey. Cover and cook until carrots are tender and most of juice is absorbed, about 10 minutes; stir occasionally. Add rosemary and mix well. Serve hot.
